Blue Corn Cornbread Muffins
1 1/2 cups boiling water
2 tablespoons butter
2 tablespoons honey
2 large eggs
1 cup green chile
1 cup sharp cheddar cheese
1 cup green chile and 1 cup sharp cheddar cheese
Preheat oven to 425 F. Prepare a muffin pan by lightly coating with non-stick cooking spray.
Pour blue corn cornbread mix into a medium bowl.
In a separate small bowl, add the 2 tablespoons of butter to the boiling water and let stand for 5 minutes. Add 2 tablespoons of honey to water/butter and stir for 1 minute to blend.
Add butter/water/honey mixture and eggs to blue corn cornbread mix. Add green chile and/or cheese. Stir with a wire wisk until all of dry cornbread mix is moistened, about 25 strokes. Batter will still be lumpy.
Pour batter into greased pan.
Bake in the preheated oven for 18 to 20 minutes or until golden brown and a toothpick inserted in middle comes out clean.
