New Mexico State University and the Chile Pepper Institute will be closed for the Holiday's December 24 - January 3. No orders will be taken or received during this time and no phone calls will be returned. We will resume normal business hours on Monday, January 4, 2010. All New: Holy Jolokia Salsa!
We're back, and this time we're winning awards before the chile even hits the shelf. That's right, the all new Holy Jolokia Salsa from CaJohns Fiery Foods is a Scovie Award-Winner, taking 1st Place Salsa before it was even officially released. We expect it to outsell its extremely popular cousin, the two-time award winning Holy Jolokia Hot-Sauce, and all proceeds from both items benefit a PERMANENT Endowed Chile Research Chair at NMSU (beat that, Tabasco!). Call (575) 646-3028 to have a bottle shipped to you for a Hotter Than Hell But Holy Holiday! | Featured Items

Many individuals have contacted us recently regarding flower drop on their Bhut Jolokia plants. This is a very common occurrence with this particular species, we do not know why but the Bhut Jolokia does not seem to set fruit well. There are several other factors that will affect fruit drop. Some of these include;
- Air temperatures over 95°F will cause the pollen to abort and subsequent flower drop
- Too much Nitrogen will cause excessive foliage growth and flower drop
- Certain disease or pests will cause flower drop
- Even the smallest amount of plant stress will cause flower drop
