A neat kitchen is not
necessarily a safe kitchen.

- The most common way to spread infection is via unwashed hands. Before handling food, wash thoroughly for 20 seconds. And wash after handling foods like raw meat that can contaminate other foods.

- Washcloths used to wipe counters often harbor bacteria which are spread around the kitchen during cleanup. Use freshly laundered washcloths or throw-away wipes.

- All kids love cookie dough, but if it contains uncooked eggs, it poses a salmonella threat. Tell kids to wait. Never consume uncooked eggs in beverages like eggnog or other foods.

- don't place prepared food on a plate that just carried raw meat. This can result in E. coli or other food poisoning.

- Keep hot foods hot and cold foods cold. Leaving ready-to-eat food out for two hours or more is dangerous.

- Use a separate cutting board for raw meat. Thoroughly wash all cutting boards between uses.

- Foods leaking in the fridge can contaminate foods below or nearby. When defrosting food in the fridge, catch juices so they don't spread.

- If you want to keep foods properly chilled, don't leave the door open and don't over pack the refrigerator, because cold air surrounding foods is what keeps them cold.
