Store Manager Has Deep Roots in ACES and the Mesilla Valley Farming Community
Let me introduce you to Whitney Biel, the store manager of Sam Steel Cafe and ACES in the Hole Foods. In 2006, Whitney started with the Family and Consumer Sciences department as an undergraduate majoring in Human Nutrition and Dietetic Sciences. After she graduated in 2011, she decided to continue on with the department for a master's degree focusing on Food Science and Technology. For her thesis, she developed a chocolate gelato fortified with whey protein that could be used as a post-exercise supplement by athletes or by burn victims who need additional protein and calories. Whitney recently presented her research at the annual meeting of the Institute of Food Technologists in New Orleans.
Whitney was born and raised in Las Cruces. Both of her grandfathers were farmers and her father owns Greenthumb Nursery. Whitney feels that agriculture is in her blood, and she is excited to be able to provide student-made food and agricultural products to the community in which she grew up.
The Family and Consumer Sciences department is proud to call Whitney one of our alumni, and we know she will do a terrific job teaching students and directing the new store. Stop by and meet her whenever you are in Gerald Thomas Hall.

The mission of Sam Steel Cafe is to provide superior quality products made by students to the local community and to support student research, education and development.
Sam Steel Cafe will offer student-made products such as gelato, flower arrangements, and fresh vegetables and herbs to the Las Cruces community while providing students with real-world experiences in developing, marketing, and selling new products.
