Whitney Blickem, the program manager of Sam Steel Cafe and instructor of ACES Foods at NMSU. In 2006, Whitney started with the Family and Consumer Sciences department as an undergraduate majoring in Human Nutrition and Dietetic Sciences. After she graduated in 2011, she decided to continue on with the department for a master's degree focusing on Food Science and Technology. For her thesis, she developed a chocolate gelato fortified with whey protein that could be used as a post-exercise supplement by athletes or by burn victims who need additional protein and calories for recovery. Whitney presented her research at the annual meeting of the Institute of Food Technologists in New Orleans in June 2014. Whitney has recently felt a calling towards the health and wellness side of her career and has decided to attain her BSN through NMSU’s Roadrunner Program. She will graduate December 2019 as a Registered Nurse and plans to work as needed in the emergency room.

Whitney was born and raised in Las Cruces. Both of her grandfathers were farmers and her father owned Greenthumb Nursery for almost 30 years. Whitney feels that agriculture is in her blood, and she is excited to be able to provide student-made food and agricultural products to the community in which she grew up and the university that she loves.

The Family and Consumer Sciences department is proud to call Whitney one of our alumni, and we know she will do a terrific job teaching students and directing the new store. Stop by and meet her whenever you are in Gerald Thomas Hall or Tejada Extension Annex.
